Crocks were made to preserve food for long winter months - they were designed to hold large quantities of vegetables, meats or preserves. Families used these crocks in cellars or pantries to ferment cabbage into sauerkraut or store duck confit submerged in fat. The hole near the base allowed liquids to be drained or tested during fermentation processes.
